A fluffy and delicious banana pancake recipe
I don’t know why but strangely enough pancakes seems to be a thing that I only seem to make on Shrove Tuesday. I love them for breakfast with a bit of honey and some blueberries on top. This recipe is actually a good way of using very ripe bananas. The pancakes end-up being very aromatic. So here you have it, a fluffy and delicious banana pancake recipe.
100 g flour
130 ml milk
2 very ripe bananas
A bit of butter
A table spoon or two of rum
A small pancake pan (if you don’t have one, a non-stick pan will do),
You will also need a blender.
In a non-stick pan with a little bit of butter, I start by gently frying my bananas with a tsp of sugar for only just a minute. Then I add the rum and light them up, to give them that gorgeous flambée taste.
I then mix my eggs, flour and milk and add my flambée bananas, I smooth every thing up with a blender.
Then using a ladle start cooking your pancakes like you would normally do.
Et voilà! It is that simple, but super yummy. Serve with your favourite topping.
